Roasted pepper strudel with sweet potato |
This one really is quick, easy and delicious. Made it recently when my good friend Claire came round for tea. In her opinion it was truly scrumptious!

YOU WILL NEED – for 6 people
6 sheets of filo pastry
5 peppers mixed cut into 1cm strips
1 red onion peeled and sliced
½ bulb of fennel sliced
2 sweet potatoes peeled and cut into 1cm discs
1 tsp Cumin seeds
Maldon salt black pepper, and smoked paprika
1 tsp sugar
1 tablespoon balsamic vinegar
Extra virgin olive oil
Set oven to 170c.
Place all the vegetables in a shallow roasting tray drizzle with olive oil, 1 tbsp balsamic vinegar.
Sprinkle salt, pepper, smoked paprika and cumin seed.
Place in preheated oven and roast until soft and coloured (about 30mins). Leave the oven on when you remove the peppers.
Layer up the filo sheets brushing each with oil
Place the cooked peppers etc about 4cm in from the edge of filo . Fold in the side edges over the mixture and roll into a thick sausage.
Place strudel on a sheet of parchment paper and brush with olive oil.
Place in oven for about 20 mins until golden brown.
Serve with a green salad.
